In 1973, Mike and Mary Vasquez took over an existing restaurant in Corona, CA and renamed it “Miguel’s” in honor of Mike’s grandfather. They struggled to make a go of it. Mike kept his day job and worked the restaurant at night while Mary developed dishes and recipes. Over the next two years, business improved to the point that they decided to lease a fast food restaurant just two miles down the road and named it “Miguel’s Jr.
Becoming an instant favorite with locals and travelers along interstate 91 between Orange County and the Inland Empire, Miguel’s Jr restaurants have since cropped up all over Orange County serving up fresh food from family recipes inspired by Mary’s childhood in Central Mexico.
The restaurants just launched a breakfast menu and is currently offered at its Orange, Tustin, and Costa Mesa locations.
Breakfast include:
Burritos
*Green Pig (House Favorite): Marinated pork, eggs, cheddar cheese & chile verde marinated potatoes.
*Chorizo: Mexican style sausage, eggs, refried beans and chile verde marinated potatoes.
*Machaca: Shredded beef seasoned with tomatoes, bell peppers and onions, eggs and refried beans.
*Spud: Eggs, chile verde marinated potatoes and cheddar cheese.
*Sunrise: Premium bacon, eggs, cheddar cheese and chili verde marinated potatoes.
*Carne Asada: Premium grilled steak, eggs, cheddar cheese and chile verde marinated potatoes.
Plates
*Americano: Scrambled eggs, chile verde marinated potatoes, tortillas and choice of bacon, chile verde pork or carne asada.
*Chorizo: Served with Spanish rice, refried beans and tortillas.
*Machaca: Served with Spanish Rice, refried beans and tortillas.

Love their burritos! It’s quality food that I can feel good about feeding to my kid. Very rare for a restaurant with a drive-thru!

Um, why am I excited to eat at Miguel Jr.’s?? Well firstly, this post mentioned chile verde so I am ALL over that. ALL. OVER. IT. Secondly, this much deliciousness close to home is hard to resist! I’ve tried the morning burritos including the Green Pig and the Carne Asada…liked the Green Pig, flavorful. The carne asada pieces, quite honestly, were too big of a slice and it made it difficult to eat. Still delicious tho!

So excited to get a good homestyle Chorizo burrito! Hard to find authentic Mexican breakfast burritos and these look amazing. I think I’ll need a Machaca plate too…life is short, why choose just one? 🙂 The refried beans and chorizo are calling my name!!

I love Miguel’s Jr.! Their tortiallas are so soft and don’t fall apart on you. The hot sauce is a favorite too. Can’t wait to try their breakfast!

My family just came back from Cancun and it was my sons first time in Mexico. They experienced Mexican food for the first time at the trip, love it. My sons would be so excited if we get to eat at Miguel’s Jr. for some great Mexican food now that we are home.
