I don’t care what anyone says about the big named cupcake stores, they might be pretty and elaborate, but when it comes to taste — which is always my primary concern — I want to bring your attention to Simply The Cupcake Store hidden away in an nondescript strip mall in Mission Viejo.
The store is basic, nothing elaborate or fancy to stimulate your senses like the — ahem — other cupcake shops in town. But none of that matters once you bite into these cupcakes.
I’m generally not a fan of cakes. Why? Because the majority of cakes out there are dry, and unappealing. It isn’t often I come across a well-executed cake which combines flavor without being overly sweet, and perfectly moist without being cloying.
I bite into the French Raspberry cupcake and immediately fall in love with the moist cake and very light buttercream frosting on top. I thought it was a fluke, that is, until I bit into the S’mores with a perfectly textured chocolate cake topped with toasted marshmallow.
But wait, then there is the Lemon Drop — my favorite of all — reminiscent of the French Raspberry but with the distinctive tartness I love.
After tasting a few of the cupcakes, I selected a few to bring to my friend!

Dry cupcakes are the worst! This place is a bit far, but whenever I happen to be in the area, I’ll make a note of it to visit!
