Noodle Theory — Oakland, CA

We stopped in to Noodle Theory purely by accident. After circling around the Rockridge area for close to 20 minutes, I was tired and was about to leave. The restaurant we wanted to try was The Ramen Shop, but due to road works, some of the parking was closed off, and it was impossible to find anything close by.

Admittedly, it was cold outside, and we were both hungry, but I was ready to walk the six to seven blocks, but my son was not keen on it. So into Noodle Theory we go. After waiting 20 minutes for a table, we were comfortably seated in the corner, and settled in to peruse the menu.

The menu isn’t exactly traditional, but I welcomed the eclectic offerings, and after peeking at the delightful dishes on neighboring tables, we were ready to order.

Handwrapped Shrimp and Chinese Chive Dumplings with a Chinese Black Vinegar ($8.50) are some of the best I’ve eaten in a restaurant. The wrappers are paper thin, and the ample filling very flavorful. I know they are made in-house because I saw gyoza wrappers on a table in the kitchen when I used the restroom.

I order Grilled Salmon Ramen in a Miso Broth ($12) and was not disappointed. The salmon is tender, and although you’re not able to see from the photo, the portion is very generous. I love how tasty the broth is, but it isn’t greasy whatsoever.

Fried Chicken Karaage Ramen in a Spicy Pork Miso Broth ($13) is another solid pick. I am so impressed by how unctuous the broth is on the palate, but without the oil floating on top. In fact, even the leftovers the next day revealed no hardened fat congealed on the top of the container.

The karaage is served on the side, which retains crispiness on the exterior, while the inside stays moist.

I always order vegetables, and Chinese Broccoli with Oyster Sauce and Toasted Garlic ($7) is simple, yet possesses textural contrast from the crunch of the garlic.

Our meal was delicious, and highly satisfying. Service is friendly, and you see a wide mix of clientele eating here. Definitely worth coming back for.
