THE EASY AIR FRYER COOKBOOK: Healthy Everyday Recipes for People With Diabetes by Kathy Moore and Roxanne Wyss and THE INSTANT POT DIABETES COOKBOOK written by recipe developer, and nationally recognized cookbook author Nancy S. Hughes, in my opinion, go hand in hand.
I use my Instant Pot™ at least once a week, and the cookbook features classic favorites and refreshing new recipes for both weeknight meals or large gatherings with families and friends. The book includes 90 recipes with detailed instructions that walk readers through every step of cooking with the Instant Pot™
My favorite recipes in this book include: Minted Moroccan Chicken Wraps and Chicken Curry Salad on Asparagus, Edamame and Greens
As much as I use my Instant Pot™, I use my Air Fryer even more. I mostly use it to reheat leftover items such as fries, egg rolls, or anything fried that I’ve brought home.
The Easy Air Fryer Cookbook allows me the option to create meals from scratch that aren’t usually healthy, but now, are healthier from cutting the fat from traditional frying methods of up to 75%. I love the Southwestern Egg Rolls recipe — which I’ve tweaked by using different styles of fillings — as well as the Nashville Hot Chicken recipe.
