The pandemic has certainly brought all of our inner chefs to the fore. I know I have been cooking up a storm these last six months! If you’ve been cooking, have you run out of ideas yet? I’ve found myself looking online for various ways to cook certain produce, or finding a different way to present a familiar dish so my family is not bored.

My fellow Dame (of Les Dames d’Escoffier) Belinda Smith-Sullivan is a chef, author, spice blends entrepreneur, and a commercially rated pilot. Her latest cookbook, Let’s Brunch, is a cacophony of delightful recipes for you to create at home.

Let’s Brunch opens with breads and toppings, where you’ll find both savory and sweet selections to satiate all your fussy tastebuds.

My favorites include Caramelized Onions and Feta Mini Tarts which can be made ahead of time. Chef Belinda would absolutely make pie crust from scratch but since I am terrible with dough, I choose to use store-bought.

Moving on, the “Egg” section provides some lovely one pan meals to serve your family. My favorites are Italian Baked Eggs and Sausage, a hearty dish that is ideal when the weather starts cooling down. Plus, it is easy to put together beforehand, and into the oven when you are ready to cook it up. Another stellar offering is  Salmon Asparagus Quiche which makes for a tasty main course whether for breakfast, brunch or lunch.
I am also enamored by the various side dishes Chef Belinda has created. I love the Southern Style Succotash as well as Collard Greens and Rice Casserole recipes. Succotash is one of my all time favorites because it is not only pretty to look at, but it is also a delicious and healthy addition to any meal.
Let’s Brunch is a collection of 100 recipes to get your creative juices flowing. Follow Chef Belinda’s recipes, and once you’re comfortable enough, you may substitute some ingredients according to season. I am confident these recipes will become your all-time favorite go-tos in no time. Why not select a few to create this weekend with your family?
