During this last year, I’ve cooked so much at home, and have found some seriously great products during the process. Simply Food is a local (LA) company with Vietnamese roots. The rice blends used to create the noodles utilizes ST24, an award-winning strain of rice from Vietnam.
What I love about these noodles — and there are several to choose from — is that they possess beautiful texture, allowing them to retain its bouncy texture, giving you a wonderful chewy mouth-feel without the gumminess.
I used the egg noodles to make chow mein, and the texture held up very nicely. My family enjoyed this tremendously!
I tested the pho noodles periodically to ensure I got the texture I liked. If you do that the first time, you will know the exact amount of time needed to get it to the firmness you desire. I loved how these noodles did not become mushy.
The rice papers are a tad tricky mainly because you have to soften them before rolling. They are super delicate, but after a few tries, you’ll get the hang of it. I used them to make eggrolls — I used Simply Food vermicelli inside the eggrolls.
What I love is that we can support local businesses by making better choices when we are shopping for groceries. Keep an eye out for these products at your local Asian grocery store!
