Who has the time to cook these days? Not me. Therefore, I was super stoked when I read through The Quick Six Fix, a cookbook from Irish celebrity chef Stuart O’Keeffe. The book offers up 100 incredible quick and easy recipes using six ingredients, six minutes of prep time, and six minutes of clean up.

There are dozens of delicious recipes for breakfast, salads, soups, pasta, fish, chicken, pork, beef, sides, and desserts that will get you in and out of the kitchen in 30 minutes or less.

Of course, you’ll need the essentials such as salt, pepper, cooking oil, garlic, butter, eggs etc. Chef Stuart’s philosophy is simplicity, and that fewer ingredients afford higher quality.

There are simple recipes like Lemon Chili Avocado Toast, or Speedy Gonzales Eggs. There are several recipes for dressings which pair perfectly with his salad recipes. I love the Simple Bread Salad!

Soup is another section I found helpful. There are eight to choose from and I especially enjoyed the Butternut Squash and Coconut Soup. Stuart’s Irish Yankee Mac and Cheese is easy peasy and I loved the Minty Peas recipe as well.
