For the spring season, True Food Kitchen has released a handful of new dishes to reflect the bounty of beautiful produce that’s currently available. We were at True Food Kitchen twice this week and Miso Glazed Eggplant ($12) was my favorite new menu item.
The eggplant is tender and enveloped in umami-filled miso. The gorgeous charred eggplant chunks are paired with lentils, roasted peppers, almond, truffle, tahini yogurt, and black walnut pesto. Not only is the dish gluten-free, but it is also perfect for vegetarian diners.
The only surprising thing is the dish isn’t served warm. A great starter to share with the table.
