Sushi Roku has launched a four-course Vegan Omakase ($40) which not only vegans or vegetarians will go crazy over, but even the carnivore will absolutely enjoy. The aesthetically beautiful meal starts with Organic Kale Salad with meaty King oyster mushroom slices tossed in a ginger plum vinaigrette, and garnished with crispy dehydrated shiitake mushrooms. Its sweet-tart flavors are an ideal start to the meal.
Next, a Trio of Appetizers arrives with roasted cauliflower, miso eggplant, and grilled corn on the cob. My favorite was the miso eggplant!
There are three main course options to choose from:
4pc Assorted Vegan Nigiri and “the vegan roll” is a stunning plate of various sushi including pickled Napa cabbage with shiso and lemon zest; strawberry ceviche wrapped in daikon; cauliflower salad wrapped in daikon; yuzu guacamole topped with wasabi root and rice crackers wrapped in cucumber; and four pieces of a vegan cut roll with grilled eryngii (better known as trumpet mushroom) and asparagus, jalapeno, butter lettuce, soy paper and almond sauce.
Grilled Avocado is a silky smooth avocado split in half, grilled, and then drizzled with ponzu sauce. The heat softens the avocado a little, and the salty tart ponzu elevates the natural flavor of the avocado.
Tofu Steak with Mixed Mushroom Tobanyaki arrives steaming on a plate — tobanyaki means to roast on a ceramic plate. The tofu is lightly fried, then simmered in a gluten-free citrus ponzu sauce with oyster and enoki mushrooms, and garnished with fried shishito peppers and green onions. This was my favorite entree, and best enjoyed with a bowl of steamed rice.
I am not a fan of desserts, but if you are, you will love the Vegan Chocolate Avocado Mousse served in the little crispy phyllo cup. The mousse is creamy, and the crunch from the phyllo cup gives it a wonderful textural contrast.

I would love to try this place! Delicious, creative, and beautiful vegan sushi is basically my dream come true. Good vegan sushi in a format like this is not easy to find.
