Súp Noodle Bar: grand opening tomorrow

I’ve been wanting to check out Súp Noodle Bar for ages, and finally, one opens in my neck of the woods! The Irvine location is in the midst of soft opening, officially opening tomorrow with a host of goodies for guests on opening day (please see below for more details).

We are huge fans of Súp’s sister restaurants, The Vox Kitchen, and GEM Dining, so it is exciting to find some of their dishes on Súp’s menu as well.

Here are some of the items we tried:

Egg Rolls ($8/3 rolls $2.50 add a roll)
I am a huge fan of egg rolls, and these do not disappoint. They are filled with ground pork, mushrooms, carrots, onions and glass noodles, served with a side of nuoc cham (fish sauce based dipping sauce).

Golden Bao ($9/3pcs $3.25/1pc)
I have heard so much about these baos from several friends. These pork baos are fried golden brown and you’ll discover little surprises inside such as Chinese sausage and hard boiled egg. However, I wasn’t a fan because my savory palate found them a little too sweet.

Chicken Wings ($11 garlic/$12.50 parmesan)
These are always my favorite when visiting The Vox Kitchen, and once again, they did not disappoint. The green dipping sauce is always such a delight because it goes with practically anything you want to pair it with.

Lomo Saltado ($19/rib eye)
Another dish we’ve had many times at The Vox Kitchen, and I love the version here because the fries are always on point. I seriously dislike lomo saltado with soggy fries, and you definitely won’t get that at Súp. The portion is very generous and the rib eye was super tender and flavorful.

Garlic Noodles ($15.50/shrimp)
This is another favorite from Vox. I love the shrimp, but the mushrooms (which is not available here) are my absolute fave! The shrimp are grilled to perfection with awesome char to impart a smoky flavor to the shrimp.

Pho Combination — Chef’s Choice ($15)
I would have to say, this was the piece de resistance of the entire meal. The broth is exceptionally flavorful, especially when you order it Shaken Style (+$0.50). What you get with Shaken Style is garlic, red onions and scallions wok-seared with bone marrow oil, adding another layer of depth to the already flavorful broth. This bowl includes beef belly, tendon, brisket, meatball and one beef rib — a lot of meat for a bowl of pho.

I am happy to know that I can come here for a bowl of legit pho without having to drive to lil Saigon anymore.

For those of you planning to visit Súp on opening day tomorrow (Oct 24, 2020), here are some of the exciting goodies you can expect to find:

*Súp’s Bourdain Style Pho is their secret menu item, which will be available at Súp Irvine in limited batches daily. It’s a twist on their Shaken Style Pho with a secret stir-fry sauce added, served with flat noodles and side of pickled garlic & chilis.
